If you do not grade photo on a certain category, this will not count against calculation of the final grade and will not impact final grade of the photo. If you do not touch the grading slider, the grade will not be recorded.

For example: you can choose not to give overall grade to a photo and only rate it on light and composition; final grade calculation will only take into account your light and composition grades. Read more about grading system.
